Tasty Beetroot Coconut Soup


1120 grams beetroot

400 ml coconut milk

4 teaspoons coconut oil

8 pinches of dried lemon grass powder

4 pieces of star anise

4 cm fresh red peppers

2 teaspoon of sea salt



Juice the beetroot. This amount will become 400 ml of juice. Mix juice and coconut milk. Heat coconut oil in skillet. Add lemon grass powder. Fry for a minute or so. Add beetroot juice and coconut milk. Cut red peppers into small strips. Add star anise and red peppers to soup. Place on medium low heat for 7  minutes or so. Season with sea salt.


Takes 10 minutes /makes 4 portions
